Christmas Coffee Catch Up: Gingerbread and Holiday Lights!

Comfy Cozy Christmas!

Hello everyone!! We have been making merry in our own way over here! I was trying to not overwhelm all of us with activities this year, and have a slower Christmas and it has been really nice. However, now as we are getting closer to the big day, I am staring to freak out just a bit! You know, all the usual things: Did I buy enough? Did I remember everyone? Will people like what we did get for them, or made for them? Maybe I took it too slow this year, did Wyatt get to do enough? Will it ever snow? What do I need for Christmas dinner? I never did get that Christmas photo of Wyatt that I wanted… And the list goes on…. I am trying to keep it all in perspective though, and enjoy the things that we are doing and not compare them to anything else.

Let’s see. Since I last posted one of these, we have done a few things.

On Saturday, we made gingerbread! I love gingerbread, Billy loves gingerbread, Wyatt loves gingerbread. We are a gingerbread kind of family! The recipe I use is from @ofbeeandbear. This recipe is amazing, and she is a wonderful, beautiful soul. Her recipe calls for types of flour, spelt and wheat; however I use all purpose and wheat, which she says is perfectly fine. Or you can make them using entirely all purpose flour. Anyway, I think her recipe is the perfect balance of the spices and chewy vs. soft, if that makes sense.

We started that morning off right as well, with pancakes, some of them plain, some cinnamon, and some ginger. It was a delicious start to the day!

After Wyatt’s medicine and nap, and a quick trip to the library, the baking commenced!

We danced and sang along to Christmas music as we baked, in the glow of our little Christmas tree, as the day itself was very gray and gloomy. We made our own sunshine though as we all had our jobs to do. I made the dough and also rolled it out, Wyatt cut the shapes, and Billy kept the assembly line from table to oven and out again rolling!

They turned out delicious, if I do say so myself. We enjoyed a few all nice and warm and freshly baked on the floor in front of the tree, and I am pretty sure Oliver was giving us the eye because he wanted some too. Sorry Oliver, geckos can’t eat gingerbread!

On Sunday, it rained all day long. Like all day. Nonstop. We had had plans to go to the Detroit Zoo for the Wild Lights, but there was no way we were going in the rain. So instead we just caught up on things around the house, which was way less fun. Our tickets were open ended thank goodness, so we decided to go to the lights on Tuesday instead. Billy worked from home that day, and when quitting time rolled around, we headed to the zoo!

We had so much fun. It was a chilly night, but not too cold, and thankfully, it was dry. Since it was a Tuesday, there weren’t even too many other people there, which made it nice, especially with a wheelchair. We really did have a blast!

I packed up a few of those gingerbread cookies before we left, and we happily nibbled on those, and shared hot pretzels as well, as we strolled through the zoo, marveling at the lights on disply!

We were enchanted right off the bat! Everything just looked so magical!

We all loved the Enchanted Trail.

There were animals made of lights surrounding us on the trail, larger than life, and glimmering, twinkling strands all overhead. I took a lot of video on the trail and not as many photos, but these are a few of the photos I took.

After we walked the Enchanted Trail, we continued around the zoo. I just loved wandering around and seeing what they had created.

We are making more cookies today and tomorrow, as well as watching a few more Christmas movies all the way up until Christmas Eve. Saturday we have Christmas with my dad, and we always have such a nice, chill, relaxed time. I am looking forward to it!

I have decided since it is December and my mind is on the holiday season, I would devote today’s post to books that referenced gingerbread, even a little bit, because it is my very favorite Christmas cookie of all.

I am currently reading A Wizard’s Guide to Defensive Baking and I am enjoying it so much. The gingerbread parts are not overwhelming but when they happen they are adorable.

I also have the Helen Oyeyemi book Gingerbread sitting here on my TBR pile next to my bed to be read this month. It sounds so fantastic!

Finally, The Gingerbread Queen, to round out the fantasy section! I have not read it but it sounds really fun!

Next up, the romance area! I have not read any of these, but they all sound like they would be great Christmas reads. If You Give a Jerk a Gingerbread particularly grabs my attention as it has big Bake Off vibes!

The Gingerbread House in Mistletoe Gardens and The Gingerbread Cafe are both grumpy sunshine romances, which are always good for some great back and forth banter. I mean, a book that deals with gingerbread can’t be too sweet after all.

I love Amanda Flower books and she has so many that I haven’t read yet, including her entire Amish Candy Shop series of cozy mysteries. I think I may have to try to squeeze this one in this December!

Bee Bakshi and the Gingerbread Sisters just looks so good. It is a middle grade, but that cover and the vibes – super creepy. I am definitely adding this one to my TBR.

Lily Fox and the Gingerbread Cookie. It looks like a very simple picture book about a fox following his nose to find the gingerbread that he can smell, but I just love the cover illustration. And, foxes, we all know I love them.

And finally, my son Wyatt’s contribution to the list today, his favorite gingerbread picture book, Gingerbread Pirates. it was pretty funny, I have to admit!

And that is it from me today! I can’t wait to see what everyone else chose! I also might need to go find a gingerbread latte somewhere…

Wolfenoote, Baking, and Christmas Homeschool

Wolfenoote! A totally 100% made up holiday, dreamed up by a child in New Zealand, and whose parents in a random online story shared that dream. And of course, people like me read it and were like, I’m in! Wolfenoote ” is about celebrating our pack – human and animal – helping where we can, and making the world a better, kinder place.” I love that! It is suggested that to celebrate, you enjoy roast meat, a cake hat looks like a full moon, and if you have a dog, give that dog a present! Human pack members can also receive a gift, but we haven’t done that part as of yet.

We spent the week in our homeschool reading stories that exemplified kindness, we talked about kindness and ways we could show our families and friends and communities kindness. Then on the evening of the 23rd we had roast beef and blue cheese sandwiches on toasted bread, and meatballs. Billy had that brilliant idea, and I love him for it. Thanksgiving was just a few days out and it seemed a little crazy to have two big meals in one week like that. And it was perfect. We had a picnic (inside) since wolves do not sit at tables, ate our sandwiches and meatballs, then it was time for cake! And frankly, that cake was awesome. I am not a baker so I just made a box cake (Aldi yellow) but it was delicious! It had to be that Wolfenoot magic. I also stuck a little wolf silhouette in it. We followed up dinner with some wolfy and nature readings, and voted whether we were going to symbolically adopt a wolf from the Wolf Conservation Center or donate to a local animal shelter. We decided since we usually do the wolf thing for the wolf moon in January, that this time we would donate to an animal shelter. After making this big decision, we listened to Wyatt’s favorite Okee Dokee Brother’s song, Howl. Twice. Loudly. With howling. And then it was time for little wolf cubs to get a bath and go to bed. It was a good Wolfnoote.

For not being a baker, I have been doing a lot of it! The cake on Wolfnoote, and then a Cranberry Pie for Thanksgiving. This is hands down my favorite pie to make. It is fast and easy, and tastes delicious.

I probably could have taken a photo of it after it was finished, and the lid top was on. I blame that wine for this bad photo decision.

Then it was December before I knew it! One thing I love about homeschooling is taking the month of December and trying to theme a lot of our month around Christmas type themes. I mean, I can’t with all of it, but I can quite a bit. It’s a little more work since I go off road from our curriculum and pull it all together myself (my weekends have hours filled with planning) but it is all worth it.

This week was all about gingerbread! We read multiple versions of the gingerbread man story, created gingerbread men from paper, and finished up with a “Gingerbread Cafe” and made our own gingerbread! Well, I did. I lost my helper quickly. Gingerbread takes a long time! He did resurface for the eating of it. As did my husband who was working from home. The gingerbread was a big hit. I didn’t think I liked gingerbread, but it turns out, I do. A lot! I used a recipe from @ofbeeandbear on Instagram, subbing out the spelt flour with just regular flour, and they are delicious.

We made gingerbread girls, boys, and of course, foxes. I need to make sure to copy this recipe down, as it is a winner and will be made every Christmas from here on out.

I feel like our Christmas homeschool is off to a fun (and tasty) start!
