Thursday Morning Coffee Catch Up

Good morning! Thursday mornings are super busy for us! Wyatt has physical therapy and speech back to back and we have an early start. I finally have a chance to sit and enjoy a cup of coffee, thank goodness.

Hmm where to start?

Thanksgiving! I didn’t take many photos during our celebration; I was totally in the moment, enjoying family, food, and hanging out. I hosted at my little house this year which was different for us but we loved it, although it was tiring! Whew! Most of my family are pescatarians, so we didn’t even make a turkey, even easier. We made something that when I tell most people they are like, say what? But let me tell you, it was delicious. We made a version of shepherd’s pie but with salmon, and oh my goodness. It was perfect. I’ve seen it called online fisherman’s pie, but the recipe we used just called it fish pie which sounds not as nice but tasted amazing anyway. Lol. Everyone brought a dish or two – we had cheesy potatoes, mashed potatoes, green bean casserole, corn pudding, Billy’s homemade sourdough loaf, pumpkin pies that Chrissy made, and then my Nantucket Cranberry Pie. Well, the Pioneer Woman’s Nantucket Cranberry Pie, but it was my contribution. Everything was fantastic and I ate way too much.

Wyatt and I were mostly lazy Friday (Billy had to work, but thankfully from home), but we did take some time to make a countdown to Christmas chain! This one has a book title on every loop, and when Wyatt tears that one off, we will read that book that day! I’m pretty excited to start it tomorrow!

I also did some online shopping, and bought our Christmas homeschool curriculum. Oh, and also tickets to Holiday Lights on the Farm! It is held at a metropark near us and there will be lights, Santa, snacks, all sorts of fun things. And best of all, a wheelchair accessible wagon ride! I am super excited about it.

Saturday we got back to it, and decorated for Christmas!! I think I am going to do a separate post on this so… you will have to wait. Hopefully it will be worth it. LOL.

Sunday we took it easy again, before we had to get back to business – school, work, therapy.

I do want to share this video I took of Wyatt at therapy on Monday! He was having a blast, and every time I watch it I smile. I hope it makes you smile too!

    I watched that reel of Wyatt and chucked every time. The first time, I didn’t realize he was actually moving things from side to side. I could see the concentration. But, it looked like a fun way to work muscles.

    Your paper chain sounds like a wonderful idea. I wish I’d had something like that back when I was reading to my kids or even in my classroom!

    We went to Winterlights on Sunday. It was gorgeous, but I have to admit your Holiday Lights on the Farm sounds like oodles of fun.

    I can’t wait to see your house all decorated. I’m about there with mine. I tell Mike it’s a domino effect. I have to find space for what is already there before I can put the Christmas stuff there. You’d think, since he’s an engineer, he’d get that!

    1. Lol! Isn’t it hilarious? He has to roll all the way across the mat, grab a bean bag, and roll all the way back to the basket. He loves it so much!

      And thank you! It was such a simple craft to make too. And it would be fun in a classroom! Every kid could pick a book…

      I saw you posted about winterlights! As soon as I catch up on comments on my blog I am going to go read it!

      Well. We have a teeny house for reals, and so we don’t go too crazy. But we do have our little spaces for Christmas decorations that make us smile! So don’t get too excited! LOL. But you are totally right! I always tell Billy that too – it’s like what am I supposed to do with our other stuff? Lol.

    You did better than I did; I didn’t take one single photo on Thanksgiving (well, not once company showed up anyway; I think I did remember to take an outfit photo). That fisherman’s pie sounds delicious. I LOVE salmon. My mom used to make some sort of salmon and potato pie… I should ask her for that recipe. I didn’t enjoy it at all growing up but now I just love seafood.

    1. It was amazing!!! Ooo now I am curious about your mom’s recipe too! I would not have enjoyed this fisherman’s pie as a kid at all. The kids at our Thanksgiving decided that they needed Velveeta Mac and Cheese…. so that is what they ate. Lol.

  4. I’ve had my eye on the cranberry pie recipe. It looks amazing! I made a turkey but honestly one of my favorite Thanksgiving meals involved prime rib and Christmas Eve this year is changing from the traditional meal to finger foods and that kind of thing so I say eat what you like! We started our Christmas cookie unit study today with Christmas Island. I doubt we’ll be baking much (Will has no sweet tooth and I can’t eat that many cookies!) but we had a really great discussion on how living on an island influences economics and culture. So glad you shared it!
